Let us now embark on a journey of mango processing and you will witness how we have ensured complete automation of the entire process with minimal human touch. Bhilawadi station/s proximity to the mango belt, viz. Ratnagiri and Deogadh, ensures that the fruit used for processing is the best. Mangoes purchased are sorted and allowed to ripen naturally so as to maintain the natural flavour. Once ripened these fruits are handpicked, inspected and mechanically washed in the beginning of the process. Here the fruits are rinsed by high-pressure water jets. The fruits are personally sorted out by our experienced staff, to ensure the right quality and as they move on to the inspection line known as the Merry-go-round. After this point, there is no human touch, as the entire process is automated, ensuring completely hygienic processing. The mangoes that are cut are then transferred by the bucket elevators to 3-stage pulping: Destoning- where the seed and the rind are separated, Pulping and lastly Finishing. Care is taken to dispose off the separated seed and rind. The next state in this automated process is the Decanter (supplied by Wesfalia, Germany) where Black specks are removed to ensure high quality pulp. The pulp collected in holding tanks undergoes chemical analysis by the quality control department for approval and certification. This pure pulp then moves on to fully computerized tube in tube type sterilization, from Asepsystem, Italy. The sterilization process involves heating the pulp to a pre-determined sterilization temperature and subsequently cooling to ambient temperature. This heating and cooling frees the pulp to microbial flora. The final stage of processing is now reached, wherein the sterilized pulp is passed through computerized aseptic filler and filled in pressurized Aseptic bags of desired quantity, in drums. The principle of Good Manufacturing Practices that we at Chitale adhere to, is evident in this entire process. The entire plant is designed, planned, constructed and equipped as per International Standards. The flooring is alkali and acid resistant, the gutters are covered with SS gratings and the walls covered up to 7 feet with glazed tiles and many other precautions taken. This is to ensure that the end product is of the best quality and processing is under aseptic conditions. |
